Like Mother ~ Like Daughter??

For those that know her, tell me this doesn't look just her mom!!!
(as she tried to climb a pole!!!  Yep, just like something her mother has done in the past!)
and then when you ask her what she's doing, you get THIS look!!! HAHAHAHA!

Easy Peasy Dinner!

So, I was looking for quick and tasty for dinner with little clean up.  I'd seen this recipe on a blog that I really love and visit often....damn delicious!  I had all ingredients for this and decided to give it a go.
This was how it looked while cooking.  I added crawfish to the dish because, well, that's just what cooks in Louisiana do!!
And because "eaters" in Louisiana can never wait long when it's done and ready to enjoy....I forgot to take a pic of the finishes product. So, I got her pic to show you how it looked. damndelicious.net


SHRIMP SCAMPI
  • 8 ounces linguine
  • 2 tablespoons unsalted butter
  • 1 pound medium shrimp, peeled and deveined
  • 3 cloves garlic, minced
  • 1/4 teaspoon crushed red pepper flakes, or more, to taste
  • 1/4 cup white wine*
  • 1/4 cup freshly squeezed lemon juice
  • Kosher salt and freshly ground black pepper, to taste
  • Zest of 1 lemon
  • 2 tablespoons chopped fresh parsley leaves
  • 1/4 cup freshly grated Parmesan
  • Directions:


    1. In a large pot of boiling salted water, cook pasta according to package instructions; drain well.
    2. Melt butter in a large skillet over medium high heat. Add shrimp, garlic and red pepper flakes. Cook, stirring occasionally, until pink, about 2-3 minutes.
    3. Stir in wine and lemon juice; season with salt and pepper, to taste. Bring to a simmer; remove from heat and stir in pasta, lemon zest and parsley.
    4. Serve immediately, garnished with Parmesan, if desired

Just Makes Me Happy....the little things!

Summer is fading into Fall and life is beginning to slow down a bit and I'm loving it!  Makes me happy.....

2 Down.....2 To Go!!

Or maybe that should read 2 in....school!!    Ms. Lillian Leigh started first grade a week ago...
Then yesterday, Mr. Case, began preschool for the very first time!!!
Austin and KatieJane will be next for pre-school at the end of the month!
Josey is not yet 2 yrs old and Lane is only 7 months, so they will be staying home with mama....
(and daddy sometimes too!!)

So obviously, summer is winding down since the babies are going to school ~ but there's one more sign of fading summer days.  The last of my hydrandea blooms...

I'm more than ready for Fall!!!!!

Reminiscing About Our Sailing Days.....

The maiden voyage of Blew Bayou back in 2006 sailing in all her glory with our LSU themed spinnaker!
Our hailing port got MANY looks and questions from around the world about where in the hell is Uncertain TX???
Of course, our answer was always......"we're not sure"!
Cap'n having fun no matter what he was doing.....even rescuing his cup when it no doubt flew overboard.
My middle son and his brand new wife, at the time, were the first crew aboard....and I think his t-shirt says it all!!
And this is how most days cruising ended...anchored on a still body of water, watching the sunset with a cool cocktail
Many wonderful memories from those times on the water.....definitely a check on the Cap'n's bucket list!

WHA???? Where Have I Been??

NO WHERE!!!!!  It just seems that summer is either really laid back and I'm lazy OR we've been busy doing ...oh, I don't know.....a lil bit of everything!!
My son informed me last weekend that it's been 20 days since I made a post to the ol' blog..WHA???
So here we go with a lil bit of a catch up.....

1.)  First of all, I have been overwhelmed with all the tomatoes that mah boyfriend has produced since June.  They have been everywhere in my kitchen and we've given loads away.  Tried to keep the kids stocked up and I've made relish, frozen some, made sauce and eaten so many mater sammiches that I've gained weight from all the bread!!!!!

2.)  Heat!
As most of you know, it's been hot.  Really, really hot!  And because of all the flooding we had in the spring, a lot of the trees have been falling down all around us. Big...Old...Beautiful trees. A very large one that was in the perfect spot to shade our pool fell over into the lake. (thank goodness it fell that way and not the other way INTO the pool)  My baby boy and his dad ended up cutting it loose and hauling it out to sink it in the river.  
Makes me sad. Not only because we lost a gorgeous tree with lots of history but now our pool water has gotten very warm. Bath water warm. And it never used to get hot until late late August.....
3.) Ballet Camp
KatieJane decided she wanted to dance this year so her mom put her into a dance camp to see if she would like it. Sorry for fuzzy pic but this lil girl literally was never still long enough to get a good pic....she was SO excited to wear her tutu and her ballet/tap shoes and she danced her little heart out!!!!  But we soon found out that was the ONLY thing she wanted to do....dress up!!  She decided she really didn't want to do ballet afterall (she's only 3) and she's going to go back to gymnastics!
It was fun to watch her tho!!
4.)  Family Time

We've had lots of weekends together at the lake enjoying the summer. Gathered around the bar on the deck eating and having a few cocktails. Telling stories and laughing out loud with each other. Swimming. Boating.
and of course, enjoying Cap'n's pancake breakfasts!
and SophieJane sleeping FOR DAYS after everyone goes home!!
5.) Having Sleepovers with my Dallas babies!
6.)  No. 4 grandchild, Case, turning 3 and looking so grown up, especially when his little brother, Lane, sits beside him!!!

7.)  Learning about Worms!!
We have a Catalpa tree in yard at lake. When my boys were very small, their dad taught them about collecting them from the leaves of the tree to use as fishing bait.  There were many a time when I opened my freezer to find frozen catalpa worms looking at me!  Last weekend, we all went to the deer camp and Cap'n surprised the kids with a "Worm Lesson".  He brought some leaves and some worms and told them the stories.
They were very attentive!

and before you knew it, the daddy's....my little boys.....were gathered round to listen too!! (geeze, I love them!)
8.)  Back To School
and before we knew it, school started on Monday and our No. 1 grandchild started First Grade!
WHERE has that time gone??  I became a grandmother - blinked my eye - and she's a big girl in school now.....
9.)  Lunch with my Homies!!!
We tried all summer long to get together for one of our looooong lunches but it just never happened. Between family vacations and grandbabies between all of us, it just never worked out.
But today.....as summer begins to wind down and fades back into the routines of Fall....we made it happen!!  Sangria, homemade bread with homemade mozzarella and rosemary and the companionship of very good friends.......sigh.....Good Times!

 I plan to get the big camera back out....I gotta tell ya I am not liking just using my phone for pics...just one more relinquish to modern technology...
